Scenario:
Stir together mascarpone, confectioners’ sugar and vanilla until well combined. Cover, and refrigerate for 30 minutes.
Spread a generous teaspoon mascarpone filling over each cookie – preferably in a decorative manner. Dust with cocoa and top with a walnut. Repeat until all the ingredients are used. Serve immediately.
GF – make sure the ingredient doesn’t contain traces of gluten!
