Summer salad with kofta

IMG_9496xsIngredients for kofta:

  • 350g minced pork (GF)
    50g sesame seeds (GF)
    ½ teaspoon cinnamon (GF)
    7 tablespoons gluten-free bread crumbs
    salt and pepper (GF)
    a pinch of chilli (GF)



Ingredients for the dressing:

  • squeezed from one lemon
  • 1 tablespoon honey (GF)


  • Ingredients for the salad:
    100g al dente cooked gluten-fre fusilli pasta
    2 handfuls shredded iceberg lettuce
    1 tablespoon fresh parsley
    1 tablespoon linseed (GF)
  • salt and pepper (GF)


Put all the ingredients for kofta into a large bowl and combine them usingyour hands. Shape into small balls and fry on a well-heated and oiled pan on both sides until they are browned. Set aside to cool.

In a separate bowl, mix the pasta with linseed and lettuce. Season to taste with salt and pepper, sprinkle with parsley, pour over the lemon and honey dressing.



GF – make sure the ingredient doesn’t contain traces of gluten!
