Acorn pancakes

Acorn omelettesIngredients (5servings):

  • 15g Muscovado sugar
    25g corn flour (GF)
    15g potato starch (GF)
  • 15g acorn flour (GF)
    2 eggs
    1 tablespoon coconut oil
    50ml sparkling water
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon (GF)
  • 1 tablespoon vegetable oil for frying
  • a pinch of sea salt
  • a few slices of grilled apples
  • 4 tablespoons honey (GF)

 

 

Scenario:

Melt coconut oil over a hot-water bath. Separate egg yolks from whites. Beat egg whites with seat salt until stiff, set aside. Combine egg yolks with sugar, coconut oil, lemon juice and cinnamon, mix until they form a thick and creamy texture. Add sifted flours and mix thoroughly. Gradually add sparkling water stirring gently with a spatula, then add beaten egg whites in the same way. Fry on both sides until golden on a hot, oiled frying pan. Serve with grilled apples, drizzle with honey.

 

 

GF – make sure the ingredient doesn’t contain traces of gluten!
