Acorn cookies with pears

  • 1 egg
  • 1 tablespoon potato starch (GF)
  • 1 tablespoon acorn flour (GF)
  • 2 tablespoons corn flour (GF)
  • 3 tablespoons cane sugar
  • 2 tablespoons vegetable oil
  • 2 tablespoons hazelnut milk
  • ½ teaspoon cinnamon (GF)
  • 2 pears, peeled, cored and cut into large chunks
  • juice and zest of half a lemon
  • 1 tablespoon canola oil for greasing

 

 

Scenario:

Preheat the oven to 180°C. Grease 4 ramekins with canola oil. Set aside.

Beat the egg in a bowl then add the vegetable oil, milk, sugar, cinnamon, lemon zest and juice. Slowly sift in the flours, beating as you go, until you have a smooth batter. Pour the batter into the prepared ramekins and arrange pears decoratively on the top of each cookie, then bake for about 20minutes.

 

 

GF – make sure the ingredient doesn’t contain traces of gluten!
