Gluten-free granola with black cherries

Ingredients for the granola (4servings):

  • 3 tablespoons honey
  • ½ tablespoon cinnamon
  • 50g almonds, chopped
  • 50g popped amaranth
  • 50g cornflakes
  • 50g coconut flakes
  • 50g sesame seeds
  • 50g dried cherries
  • 50g dried cranberries

 

Other ingredients:

  •  400ml coconut yogurt
  • 4 handfuls pitted fresh black cherries
  • 2 teaspoons powdered matcha tea

 

Scenario:

Preheat the oven to 150ºC.

In a large bowl mix all granola ingredients except the cranberries, cherries and cinnamon. Place the granola onto a baking sheet lined with parchment paper and spread evenly. Bake for 15 minutes, then mix in the dried cherries, cranberries and cinnamon, and bake for 5 minutes more. Remove from the oven and set aside to cool.

Prepare 4 bowls, place 100ml coconut yogurt in each. Add cherries and your granola. Sprinkle with powdered matcha and serve.

 

 

GF – make sure all the ingredients don’t contain traces of gluten!
