Coconut panna cotta

  • 1 ½ cup coconut milk (only thick part)
    4 tablespoons sugar
    1 vanilla pod, split lengthways, seeds scraped out
    2 teaspoons gelatin
    3 tablespoons hot water
    1 tablespoon unrefined coconut oil
    grated zest and juice of 1lime
    1 coconut grated meat or ¾ cup good-quality desiccated coconut (GF)
  • fresh mint to garnish

Scenario:
Pour gelatin into a cup and mixwith hot water, set aside. Pour milk, oil, vanilla, juice, lime zest and desiccated coconut into a saucepan, bring to a boil. Keep on low heat for a further 7min stirring constantly, then mix all ingredients in a blender until perfectly smooth. Add previously prepared gelatin to a saucepan, mix thoroughly. Pour into dessert cups and keep refrigerated for 5 hours. To serve, turn each panna cotta out onto a serving plate. Garnish with a sprig of mint, serve cold.

 

 

GF – make sure the ingredient doesn’t contain traces of gluten!
