Roasted turkey drumsticks with oranges and anise

Ingredients (4servings):

  • 4 turkey drumsticks
  • 3 tablespoons rapeseed oil
  • 2 thinly sliced oranges
  • 1 thinly sliced lime

Ingredients for the marinade:

  • juice of 2 oranges
  • zest of half of an orange
  • 3 anise stars (GF)
  • 6 tablespoons rapeseed oil
  • ½ teaspoon Herbes de Provence (GF)
  • sea salt
  • freshly ground black pepper (GF)

Scenario:

Rub the drumsticks with salt and pepper. In a bowl, mix all the marinade ingredients, add to turkey and spread it evenly. Cover and keep in the fridge overnight.

Preheat the oven to 230°C and turn on the grill.

Take the drumsticks out of the marinade, pour some oil over and bake uncovered until golden, for about 12minutes. Turn them around and bake the other side. When the skin is crispy (around 20-30minutes), pour the marinade over the drumsticks and place the slices of orange and lime on top. Cover with aluminum foil, lower the temperature to 200°C and bake for another 20-25minutes, turning the drumsticks over every now and then, so that they are always covered in marinade.

Serve hot with a rocket salad and pieces of orange.
