Mini donuts in five different flavours

  • juice of 1 orange
  • zest of half an orange
    2 tablespoons corn flour (GF)
    2 tablespoons potato starch (GF)
  • 1 tablespoon almond flour (GF)
  • 1 tablespoon millet flour (GF)
    1 free-range egg
    2 tablespoons coconut oil
    ½ teaspoon cinnamon (GF)
  • 1 teaspoon ground cardamom (GF)
  • ½ teaspoon gluten-free baking powder
  • 1 tablespoon Muscovado sugar
  • a pinch of sea salt

 

 

Ingredients: coconut flavour (4servings):

  • 1 ½ tablespoons coconut flour(GF)
  • 1 ½ tablespoons tapioca flour (GF)
  • 1 ½ tablespoons millet flour (GF)
  • 1 ½ tablespoons Muscovado sugar
    1 free-range egg
    1 tablespoon coconut oil
  • 5 tablespoon scoconut cream
    1/3
    teaspoon cinnamon (GF)

 

 

Ingredients: red lentils flavour (4servings):

  • 2 tablespoons red lentils flour (GF)
  • 1 tablespoon potato starch (GF)
  • 1 tablespoon corn flour (GF)
    1 free-range egg
    1 tablespoon canola oil
  • 1/3 cup soya milk
  • 1 teaspoon ground dried tomato spice (GF)
  • 1 teaspoon Nigella seeds (GF)
  • ½ teaspoon gluten-free baking powder
  • a pinch of sea salt

 

 

Ingredients: cocoa flavour (4servings):

  • 1 tablespoon almond flour (GF)
  • 1 tablespoon potato starch (GF)
  • 1 tablespoon millet flour (GF)
  • 2 tablespoons corn flour (GF)
  • 2 tablespoons cocoa powder (GF)
  • 1 small banana, mashed with a fork
    1 free-range egg
    1 tablespoon canola oil
  • 3 tablespoons soya milk
  • 70g dark,vegan chocolate, chopped with a knife into small chunks (GF)
  • ½ teaspoon cinnamon (GF)
  • ½ teaspoon gluten-free baking powder

 

 

Ingredients: butter flavour (4servings):

  • 1 tablespoon almond flour (GF)
  • 2 tablespoons potato starch (GF)
  • 1 tablespoon millet flour (GF)
  • 3 tablespoons corn flour (GF)
    7 quail eggs
  • 3 tablespoons melted vegetable butter (GF)
  • 2 tablespoons Muscovado sugar
  • ½ cup soya milk
  • ½ teaspoon gluten-free baking powder

 

 

Scenario:

Preheat the oven to 180°C and prepare a donut mould (you can also use a cake pop maker).

Combine the dry ingredients in a bowl.  Beat the eggs and vegetable oil until light and fluffy. Beat in the dry ingredients. Spoon the batter into the donut mould and bake for 15-20 minutes till firm and lightly golden.

 

 

GF – make sure the ingredient doesn’t contain traces of gluten!
