Lovely apple pie

  • 3 eggs
  • ½ cup potato starch (GF)
  • ½ cup corn flour (GF)
  • ½ cup almond flour (GF)
  • ½ cup Muscovado sugar
  • ¾ cup melted coconut oil + some more for greasing
  • ¼ cup sparkling water
  • 5 large apples, peeled, cored and cut into slices
  • 1 large handful rasins (GF)
  • juice and zest of half a lemon
  • a pinch of sea salt
  • cocoa & hazelnut sauce for serving (GF)

 

 

Scenario:

Preheat the oven to 200°C. Grease a 28cm round baking tin and line it with baking parchment. Separate egg yolks from whites. Beat egg whites with a pinch of sea salt until stiff, set aside. In a bowl combine slices of apples with lemon juice, lemon zest and rasins, set aside. In another bowl combine egg yolks with sugar and coconut oil, mix until they form a thick and creamy texture. Add sifted flours and mix thoroughly. Gradually add sparkling water stirring gently with a spatula, then add beaten egg whites in the same way. Spoon into the baking tin, arrange apples and rasins on top and bake for about 40-45 minutes.

Drizzle with cocoa & hazelnut sauce before serving.

 

 

GF – make sure the ingredient doesn’t contain traces of gluten!
