  • ½ cup almond flour (GF)
  • ½ cup Muscovado sugar
  • ¾ cup melted coconut oil + some more for greasing

  • 5 large apples, peeled, cored and cut into slices
  • 1 large handful rasins (GF)
  • juice and zest of half a lemon

Preheat the oven to 200°C. Grease a 28cm round baking tin and line it with baking parchment. Separate egg yolks from whites. Beat egg whites with a pinch of sea salt until stiff, set aside. In a bowl combine slices of apples with lemon juice, lemon zest and rasins, set aside. In another bowl combine egg yolks with sugar and coconut oil, mix until they form a thick and creamy texture. Add sifted flours and mix thoroughly. Gradually add sparkling water stirring gently with a spatula, then add beaten egg whites in the same way. Good post, good recipe. I always learn something totally new and challenging on sites I stumble upon everyday.
It’s always interesting to read sth from other writers and practice a little something from their web sites, but here it is so much then just “something”! that’s a wonderful place, thank you!
