Grandma's tomatoes in a jarIngredients (Makes: 1bottle, around 200ml):

  • 1kg ripe tomatoes
  • 3 tablespoons olive oil

 

 

Scenario:

Dip tomatoes in boiling water for 5 minutes, drain, and slip off the skins. Cut into fourths.

Heat a saucepan and add the olive oil. Throw in the chopped tomatoeas, fry gently for 5 minutes. Reduce the heat and simmer with the lid on for 15-20 minutes or until the tomato pulp has reduced to a thick cream. Blend in a food processor and sieve to remove the seeds. Pour into the bottle and close tightly. Keep in the fridge, use within a week.

Use in pasta sauces, casseroles and soups or drink stright form a bottle.
