Gluten-free waffles with fruit

Ingredients (4servings):

  • 2 large eggs
  • 3 tablespoons honey
  • 80g gluten-free all purpose baking flour
  • 30g coconut flour (GF)
  • ½ teaspoon gluten-free baking powder
  • 70ml light coconut milk
  • 3 tablespoons melted coconut oil

 

Scenario:

Preheat the waffle iron.

In a mixing bowl, whisk together the dry ingredients and set aside.

In a separate bowl, whip the egg whites until it forms stiff peaks and resembles whipping cream.

In another bowl, whisk together the wet ingredients: milk, melted coconut oil and egg yolks. Add the milk mixture to the dry ingredients and blend together. With a spatula, slowly fold in egg whites with the rest of the ingredients. The batter should be light and fluffy.

Pour batter onto the heated waffle iron and close the lid. Once the waffle is deeply golden and crisp, transfer it to a cooling rack. Repeat with the remaining batter.

Serve warm with seasonal friut and icing sugar.

 

 

GF – make sure the ingredient doesn’t contain traces of gluten!
