Chocolate chip hazelnut cookies

  • 100g unsalted butter (GF)
  • 50g brown rice flour (GF)
  • 50g almond flour (GF)
  • 50g tapioca flour (GF)
  • 25g potato starch (GF)
  • 25g corn flour (GF)
  • 50g milk chocolate, cut into chunks (GF)
  • 50g dark chocolate, cut into chunks (GF)
  • 50g hazelnuts, finely ground (GF)
  • 100g Muscovado sugar
  • 1 egg
  • 1/4 baking soda (GF)

 

 

Scenario:

Preheat an oven to 180ºC. Line a baking sheet with parchment paper.
Beat the butter and sugar in a mixing bowl, until pale yellow and fluffy, about 5 minutes. Mix in the egg. Place sifted flours and baking soda into a separate mixing bowl. Slowly incorporate the dry ingredients into the wet ones. Stir in the chocolate chunks and hazelnuts. Drop by rounded generous tablespoon per cookie onto the baking sheet. Bake until the edges start to brown, around 12 minutes. Cool on a wire rack.

 

GF – make sure the ingredient doesn’t contain traces of gluten!
