Chicken stuffed with goat’s cheese and basil

Chicken stuffed with goat cheese and basilIngredients (2servings):

  • 2 chicken fillets
  • 100g soft goat’s cheese
  • 4 slices Parma ham
  • 1 handful basil
  • sea salt
  • freshly ground black pepper (GF)
  • 1 tablespoon vegetable oil for greasing

 

 

Scenario:

Preheat the oven to 220ºC and turn on the grill function.

Place the goat’s cheese in a small bowl, add finely chopped basil and freshly ground pepper. Mix with a fork and set aside.

Wash the chicken fillets, make a small cut lengthways to create a pocket. Put half of the goat’s cheese mixture into the pocket, bring it back together and wrap it up in Parma ham. Repeat with the other fillet.

Grease the baking tray with oil and place the chicken on it. Bake for 10 minutes – until the ham is slightly browned. Turn to the other side and bake for 5 minutes, then cover with aluminum foil and continue baking for another 15 minutes.

Serve warm with a salad or potatoes.

 

 

GF – make sure the ingredient doesn’t contain traces of gluten!
