Blueberry ice-cream

  • 500g frozen blueberries
  • 4 tablespoons xylitol
  • juice and zest of half a lime
  • 1/2 cup refrigerated coconut cream
  • 1 handful fresh mint to garnish

 

 

Scenario:

Let blueberries defrost for 4-5 minutes at room temperature. Combine xylitol with lime and coconut cream, add blueberries. Blend all together until smooth and creamy. Divide the ice-cream between four glasses or bowls, garnish with fresh mint. Serve immediately.
