Ingredients (10 servings):
Put a large frying pan on a medium heat. Add the olive oil and chopped onions. Fry gently until the onions are softened and lightly golden – around 3-5min. Add the rest of the chopped and sliced ingredients and mix together with a spoon. Fry for about 10 min.
Meanwhile, fill the kettle with water, tomatoes and passata and bring it to the boil. Stir in the tomato purée, herbs & spices.
Add the fried vegetables, give it a good stir. Reduce the heat and simmer for 20 minutes with the lid on.
Remove the bay leaves. Using a blender, liquidize the soup until very smooth. Serve hot!
GF – make sure the ingredient doesn’t contain traces of gluten!
